Optimism Brewing Company – Seattle WA. A nice sized brewery, with solid bones and a wide variety of tasty craft beer. In an old building in Seattle, the brewing area is surrounded by the large taproom, ensure you know you’re in a micro-brewery. There is a no-tipping philosophy, along with a mindful culture that seems to focus on taking care of people and the environment. Absolutely loved it!
